Overnight oats have been one of my favorite breakfasts to enjoy. It’s easy to put together and super customizable and versatile. When I’m bored with making the overnight oats recipes I’ve done before, I start brainstorming what kind of flavors I can make, and this time it’s Carrot Cake! 

Carrot Cake has always hold a special place in my heart. The warm, cozy flavor from cinnamon and other natural spices together with the sweet carrots is just something irreplaceable. So when I was trying to think about unique flavors for overnight oats, it just came so naturally.

What You’ll Need (Ingredients)

You only need a handful of basic ingredients to create this delicious overnight oats recipe. There are a few optional ingredients to make it more rich in flavor and texture.

  • Rolled Oats: The base for our creamy and satisfying breakfast.
  • Freshly Shredded Carrots: Adding natural sweetness and a delightful crunch.
  • Unsweetened Soy Milk: Creates a creamy oat mixture. Feel free to use your favorite milk alternative.
  • Unsweetened Soy Yogurt (optional): For an extra protein boost and creamy texture (other dairy-free yogurt works too!).
  • Maple Syrup: A touch of natural sweetness to complement the carrot flavor.
  • Raisins: Juicy and bursts of sweetness and texture.
  • Ground Cinnamon: Warm and cozy spice that evokes the essence of carrot cake.
  • Ground Nutmeg (optional): Adds another layer of comforting autumn flavor.
  • Vanilla Extract (optional): Enhances the overall flavor profile.
  • Chia Seeds: For added fiber and a thicker texture, plus some omega-3!
  • Salt (optional): A pinch to balance the sweetness.
  • Vegan Cashew Cream Cheese Frosting (optional): Even though I put ‘optional’ here, I’d say you need it to complete the full ‘carrot cake’ experience! You can also use coconut yogurt for an easier route.

Can I make it gluten-free?

Yes, simply use certified gluten-free oats in this recipe and make sure other ingredients are free of gluten, too!

No yogurt? 

No problem! Add an extra 2 Tbsp of soy milk or your preferred milk alternative.

Can I make it nut-free?

Yes, you can omit the walnuts or substitute with another nut or seed of your choice, like sunflower seeds or pumpkin seeds.

Ingredients

For the oat mixture

  • 45 g rolled oats, (½ cup)
  • 120 ml soy milk, unsweetened
  • 60 g soy yogurt, unsweetened (¼ cup) optional*
  • 25 g shredded carrots, (¼ cup)
  • 1 Tbsp maple syrup
  • 1 Tbsp raisins
  • ½ tsp ground cinnamon
  • tsp ground nutmeg, optional
  • ¼ tsp pure vanilla extract, optional
  • ½ Tbsp chia seeds
  • tsp salt, optional

For serving

Instructions

  • In a mason jar or container, combine all the ingredients for the oat mix, including rolled oats, soy milk, yogurt (if using), shredded carrots, maple syrup, raisins, cinnamon, nutmeg (if using), vanilla extract (if using), chia seeds, and salt (if using).
  • Stir well to combine, making sure the oats are evenly coated.
  • Cover the jar or container tightly and refrigerate for at least 4 hours, or ideally overnight.
  • In the morning, stir the oats again and top with vegan cream cheese frosting and walnuts or other toppings you like. Enjoy!

Notes

  • *Yogurt: You can also use coconut yogurt for a rich version. If you don’t have yogurt, just add another 2 Tbsp soy milk or milk of choice.
  • Consistency: For a thicker consistency, use less milk. For a thinner consistency, use more milk.
  • Taste adjustment: Feel free to adjust the amount of spices and maple syrup to your taste preference.
  • Servings: This recipe makes one jar, about one big serving. You can easily double or triple the whole recipe to make a larger batch for meal prep.
  • Storage: The overnight oats will stay fresh in the refrigerator for up to 3 days.
